Barley rotis the way they are made in the hills: a firm dough, patted rather than rolled, and a spoon of ghee on each one hot off the tawa.
Mash the ripe bananas in a bowl, add eggs, Mist Orchard Barley Flour, a pinch of cinnamon and salt, and mix well to form a thick, pourable batter, adding a little warm water if needed; heat a pan with Mist Orchard Pahadi Ghee, pour the batter, cook on medium heat until golden brown on both sides, and serve warm with a drizzle of Mist Orchard Honey or fresh curd.
Barley has very little gluten, so a jau roti does not stretch the way a wheat one does. It is patted out, it cracks at the edges, and that is fine — it is meant to be a little rustic.
## Half and half, if you are new to it
If an all-barley dough is hard to handle, mix in a quarter or a half of wheat flour. The rotis hold together better and still taste of barley.
