Kala bhatt · Hand-threshed
The small black soybean these hills have grown for as long as anyone has farmed them, and the base of bhatt ki churkani and bhatt ki dal. Grown on the staircase terraces cut into the hillsides, threshed by striking the dried plants with a gerwa, then sun-dried and cleaned and sorted by hand. That is the whole process.
